Taco Salad- Leveled Up

  • Instead of a seperate can of tomatoes and seperate can of chilies, I used 2 cans of mild rotel.
  • Leftovers make for a great lunch!

Taco Salad- Leveled Up


  • 1lb ground beef
  • 1/2 clover garlic, minced
  • 1-4oz can chopped, mild green chilies
  • 1-16oz can diced tomatoes, undrained
  • 1 tsp salt
  • 1/8 tsp. pepper
  • 1 head iceberg lettuce, torn into bite size pieces
  • 1 cup grated chedder cheese
  • 6 oz tortilla chips, crushed
  • 1/2 cup chopped green onion
  • 1 tomato, diced


  • Saute beff and garlic until beef is browned. Drain.
  • Add green chilies, tomatoes (or 2 cans of rotel), salt and pepper.Mix well.
  • Cook over low heat uncovered for 30 minutes. 
  • Just before serving, arrange lettuce, cheese, chips and green onion in a salad bowl.
  • Add meat mixture and toss lightly.
  • Garnish with diced tomato and serve immediatley.
