Mimi’s Sandwiches 3-Ways

My great grandmother had a farm in Kings Mountain, North Carolina. They grew most of their food and butchered their meat. Reuben Dameron was the man who plowed my great grandfathers field with a mule. My mom (Shirley), as a child, would follow Reuben with the plow and right behind her would be her pet chicken, Top Knotty. 
My grandmother with her small kitchen and very little counter space would whip up the best biscuits and dumplings. My great grandmother, mamaw, would go out and grab a chicken, ring its neck and serve the best stewed chicken and dumplings. It’s a dish that would make you cry!

Sandwiches 3-Ways

Ingredients:
  • Favorite Loaf of Bread
  • Package of bacon
  • Miracle Whip or Mayo
  • Tomato
  • Iceberg lettuce
  • Sprouts (alfalfa)
  • Roasted sunflower seeds
  • Butter
  • Sharp cheddar cheese
  • Monterey jack cheese
  • Garlic Salt
  • Salt Pepper
Mimi’s Grilled Cheese
Instructions:
  • Cut slices of sharp cheddar and monetary jack cheese.
  • Place 2 thin slices of butter on one side of your bread.
  • Lightly sprinkle garlic salt on the buttered bread.
  • Place buttered side of bread down into a skillet over medium heat.
  • Layer the cheese onto the bread and place the bread on top.
  • Place 2 thin slices of butter on top and lightly sprinkle with garlic salt.
  • Allow bread to “toast” and cheese to slightly melt, flip.
  • Toast the other side.
  • Serve with Gherkin (mini) pickles. Enjoy! 
Muckers(my grandma) Birdseed Sandwich
Instructions:
  • Lay out your pieces of bread.
  • Spread a thin layer of mayo onto each piece of bread.
  • Sprinkle a layer of sunflower seeds on both pieces.
  • Grab several pinches of the sprouts and form a layer on 1 piece of the bread.
  • Slice a tomato and place two slices on top of the sprouts.
  • Salt and pepper the tomatoes.
  • Quickly flip the other piece of bread with seeds on top of the tomatoes.
  • Slice in half and enjoy!
Mimi’s BLT
Instructions:
  • Cook bacon in frying pan over medium heat until crispy.
  • Place bacon on a towel lined plate.
  • Once bacon grease has cooled, pour into a mason jar and save in fridge for frying up other goodies.
  • Wash lettuce.
  • Slice tomatoes.
  • Lay out slices of bread.
  • Spread thin layer of mayo or miracle whip onto bread.
  • Place 2 tomato slice on top of bread. Salt and pepper them.
  • Place bacon on top of tomato. Use a couple pieces of lettuce, laid on top of bacon.
  • Top with other piece of bread, cut in half. Enjoy with some fritos!

Hershey Bar Pie

Ingredients:
  • 1 Unbaked Deep Dish Pie Shell
  • 1 Tub of cool whip
  • 2 XL Hershey Bars with Almonds (4.25 oz)
  • I-8 oz. package of cream cheese
Instructions:
  • Using a fork pierce the bottom and sides (gently). 
  • Bake pie shell according to directions, if there are bubbles in pie crust pierce gently with tip of a knife to let air out.
  • Remove from oven and let cool completely!
  • In a double boiler (bottom pan with water, with another pan on top) melt chocolate on LOW heat, be sure to watch and stir. 
  • Add cream cheese to fully melted chocolate and blend thoroughly. Remove from heat and cool.
  • Add in tub of cool whip with cooled chocolate mixture. Mix thoroughly. 
  • Pour into cooled pie shell and freeze. 
  • You can cover it with more whipped cream if you like:)
